Tomato Pasta Sauce
1 tablespoon olive oil
2 onions, chopped
4 cloves garlic, crushed
8-10 large red tomatoes, peeled, seeded and chopped OR 2 tins diced tomatoes
2 tablespoons tomato paste
Fresh or dried herbs
Salt and Pepper
Heat oil in a frying pan over medium heat. Sauté onion and garlic until just tender. Add tomatoes. Bring to the boil. Reduce heat. Stir through tomato paste and herbs. Season with salt and pepper. Simmer for 15 minutes, stirring occasionally, until sauce thickens.
Makes 4 cups.
· Add extra chopped vegetables after sautéing onion and garlic. For example: chopped red capsicum or celery, grated zucchini or carrot, etc.
