I love a master recipe that you can mix and match and make any number of variations out of it. Like this one. A basic muffin mix and 10 variations. I try to do this as much as possible in my cookbook. Give you a master recipe and then give you variations and suggestions. It's the best way to learn how to cook. I know the basic mix off the top of my head and I just add whatever else is around at the time. These delicious muffins take about 10 minutes to prepare and about 20 minutes to cook. Got someone stopping over for a cuppa in half an hour? Serve them up fresh and warm muffins. Absolutely divine.
Basic Muffin Mix
2 cups self-raising flour
2/3 cup caster sugar
60g melted butter
¾ cup milk
Preheat oven to 180°C.
Combine sifted flour and sugar in a bowl. (Add extra ingredients from the list of variations below). Whisk together milk, butter and egg in a jug and fold into dry ingredients. Do not over mix. Place tablespoonfuls of mixture into paper patty cases and bake for 20 – 25 minutes.
(Note: Add dry ingredients (nuts/choc bits/ etc to flour mix and wet ingredients (Banana/ apple/ orange juice) to butter and egg mix).
White Chocolate and Macadamia
Add ¾ cup white choc bits and ½ cup coarsely chopped macadamia nuts.
Add 2 tablespoons cocoa, extra ¼ cup milk and ¾ cup dark chocolate bits.
Follow recipe for double chocolate muffins and then ice with chocolate icing.
Banana and Apple
Add 1 cup mashed banana, 1 teaspoon cinnamon, and 2/3 cup cooked apple.
Banana and Chocolate
Add 1 cup mashed banana and ¾ cup dark choc bits.
Add 200g blueberries (fresh or frozen).
Blueberry and Chocolate
Add 200g blueberries and ¾ cup white or dark choc bits.
Add ½ cup cocoa powder, extra ¼ cup milk. After spooning mixture into patty pans, push a piece of caramel filled chocolate into centre of muffin (Caramello, Rolo, chopped Mars Bar, Mini caramel filled Easter eggs).
Omit milk and add juice and rind of 1 large orange (juice equivalent to milk quantity). Add ¾ cup dark choc bits.
Coconut and Jam
Add 1 cup of desiccated coconut and extra ½ cup milk. Half fill patty pans with mix, add a teaspoon of jam to each case and top with remaining mixture.

Life for us has been all about survival on a shoestring budget. I cook from scratch and don't buy prepackaged mixes of anything. I've learnt how to live on very basic (and cheap) staples. I've raised happy and healthy kids and I believe that good food is central to a good life!
