Chick Pea Patties
400g tin chick peas
1 small brown onion
1 teaspoon ground cumin
1 teaspoon ground coriander
1 clove crushed garlic
2 tablespoons plain flour
1 tablespoon chopped fresh parsley
1 medium carrot
Directions to Cook:
Rinse and drain chick peas. Peel and roughly chop onion. Peel and grate carrot.
Put chick peas, onion, garlic, spices, flour, carrot and parsley into a food processor. Process until smooth. Shape mixture into 6 – 8 patties. Dust with a little extra flour. Refrigerate for 30 minutes.
Shallow fry in hot oil for 2-3 minute each side until golden and crisp. Drain on paper towel.
NOTE: Handle patties with care. Patties will go lovely and golden and crisp but need to be turned very gently.
Add 40g crumbled feta to the mixture.
Gluten Free Variation:
Substitute *Orgran Gluten Free Plain Flour directly.
